Researchers Look at Beets for Energy

Reminiscent of Crocodile Dundee, only wielding a much smaller knife, Jeff Graybill was fearless when cutting open a sugar beet last Friday at Merv Lapp’s farm.

It’s actually pretty good, Graybill said as he sliced off a hearty chunk from the plant.

While they may sound appetizing, these beets won’t end up on anyone’s dinner plate anytime soon.

Instead, these beets may some day be powering cars.
